Blueberry Pie

Today me and Abhi completed 2 months marriage! To celebrate this, what better than a hearts topped blueberry pie! This also happens to be my first pie!!!This is the first time I have made a pie and it has come out beautifully!!It looks absolutely gorgeously perfect! I have taken this recipe from www.joyofbaking.com with some changes here and there.You can make this for valentines day!!! It will be perfect to finish your romantic valentines day dinner with a beautiful heart topped blueberry pie..

I have used canned blueberries for the filling. As it already contained corn starch I didn’t have to add any to thicken the filling. It also had sufficient amount of sugar but I didn’t want it to be too sour so I added ¼ cup of granulated sugar.

This is also the first time I am making pastry so it was an experience full of learning for me. I made the dough using chilled water and butter which gave it a nice flaky texture. When you take out the dough from the food processor you will be able to see small clumps of butter in it which is essential in maintaining the texture of the pastry. Also after you take out the refrigerated dough for rolling you have to knead it for a few minutes otherwise it will not flatten easily.

Ingredients

For the pastry (crust)

2 ½ cups of all-purpose flour

2 table spoons of Sugar

1 teaspoon of Salt

1 cup of chilled butter cut into small pieces

½ cup of chilled water

For the filling

1 can of Blueberries

¼ cup sugar

For the Egg Wash

Egg white-1

  1. In a bowl combine the flour, salt and sugar.
  2. Add the dry mixture and the chilled butter to the food processor and blitz. At this point the mix will look like course meal.
  3. Slowly add the water through the feeder tube till the dough is just together. Process the dough for very less time. Take out the dough from the processor, divide it into two and refrigerate for 2 hours. The dough should be either wrapped in cling film or stored in a covered container.
  4. Take the one part of the chilled dough out and knead for a few seconds. On a well-floured surface roll the dough into a disc which will fit into your pie dish. The pastry dough should reach the top edge of your pie dough.
  5. Spoon the filling mixture into the prepared pie dish.
  6. Take the other part of the dough from the refrigerator and roll it in a similar manner into a disc. Using a cookie cutter cut the pieces in the shape that you desire.(I have used a heart).
  7. Start lining the pieces carefully from the edge to the middle making sure that the hearts touch each other. Brush the pie with egg white.
  8. Cover the pie dish with cling film and refrigerate for 1 hour(I refrigerated it overnight)
  9. Bake the pie at 200 degrees for 20 minutes. Decrease the temperature to 180 degrees and bake again for 25 minutes of till the filling is bubbling and the top is brown and crusty.
  10. Serve warm with ice cream or whipped cream.
