Most resident indians would have tasted the famous ice cream dish of falooda at least once in their lives.I have had the fortune of eating a lot of Kulfi falooda. Every Time I visited Delhi I used to create a list of places I had to visit to eat in Chandni Chowk. For my mother it was a shopping expedition but for me and my cousin it was a food walk . After eating golgappas, kachoris with potato curry,tikkis and bread pakoras we needed to calm our burning tongues a glass of Kulfi Falooda from our trusted,ever-present 80-year-old uncle.He has apparently been a fixture since the time my mother was in school and has always looked 80 years old! Kulfi Falooda is a mix of Pistachio Kulfi or ice cream with Rice noodles ,Rose Syrup and wait for it..Soaked Chia seeds!
Yes,the age-old recipe of falooda has soaked chia seeds in it and I took a while to catch that! After being mind blown by a lot of delectable looking Chia Seeds pudding pictures on pintrest I was determined to make them! I asked my mother to get me some chia seeds and It was she who told me that it is something we indians use in our desserts from time immemorial! Only it has a less fancier name of Sabja here in india.These are seeds of our much revered Tulsi plant which soak up the liquid you dip them in and triple in size.
It’s mango season in india so I find myself buying them without a real thought of any specific recipe in mind.I decided to make a coconut milk chia seeds pudding with fresh mango. I soaked them at 7 in the night and couldn’t sleep in the night! I kept getting up and checking how the chia seeds are puffing up.
What started with the idea of mango chia seeds pudding ended up as a tropical fruits chia seeds pudding. I had to add my priced frozen grapes and then couldn’t stop myself from adding a little dash of red color with pomegranate.
This recipe is Paleo approved.
Caution though-this is not a whole 30 approved recipe.
- Chia seeds-2 spoon
- Coconut milk-100 ml(replace with normal milk if not on paleo or lactose tolerant)
- Grapes fresh or Frozen Grapes-7-8
- Honey-1 tsp
- Pomegranate-2 tbsp
- Soak the chia seeds overnight in coconut milk,honey and 2 tablespoon of water.
- In the morning layer the soaked chia seeds with fruits .
- Garnish with walnuts.
- Serve immediately
