Quick and Easy Breakfast Ideas

Do you think coffee unblocks worlds and boundaries and ammm…content?I think i could overlook a lot of otherwise non negotiable stuff for a good cup of coffee! Ever since I bought the magic coffe making equipment from café coffee day along with their medium roast coffee I have overdosed on it.It doesn’t help that I am drinking it with water and at times, to beat the heat on the rocks(ice cubes).I am an inch away from being snobbish about it cause I have contemplated taking my decoction when I go over for coffee at friend’s house. Yes snobbish.

This post I will introduce you to my quick,easy and healthy breakfasts recipes.The first thing you guys think of is bread right?Hmm..that’s not a choice.Thanks to the whole30 program I have successfully eliminated bread completely(99%) from my diet. I don’t buy it..don’t order it..that’s not to say I haven’t slipped but I try very hard! So what do you need for a healthy breakfast? Eggs Eggs and Eggs..if you are a vegetarian and have a sweet tooth I recommend chia seeds pudding or overnight soaked oats.

The easiest thing you can make is a fritatta.These are thick omelettes which can contain anything from vegetables to cheese or spinach or even meat.The first two recipes are a staple in my diet and my breakfast 70 percent of the time.Option 3 is something i have tried recently.

Green Frittata

I use leftover sauces to make this colorful frittata. This is an old picture but where I used the left over from Baked Tandoori Chicken with mushroom sauted in Spinach sauce to make the frittata.

You can also just blanch and purée the spinach to make this frittata.

This is a quick paleo and whole 30 approved breakfast spinach frittata recipe
Ingredients
Instructions
  1. Break the eggs in a bowl.Whisk whisk whisk.Add the leftover mushroom and spinach sauce.(or a mixture of pureed blanched spinach and some mushrooms)
  2. Add the sliced yellow pepper and onion.
  3. Heat the low pan.Drizzle oil and swirl it around to coat the pan.
  4. Pour the egg mixture in the pan.Move the egg and veggies around to make the distribution equal.On a low-medium flame cook it covered with a lid for 3 minutes
  5. At this stage the fritata should have risen a bit.Free the edges with a spoon or kinfe.
  6. If you are a pro flip it.If you are like me then heat another skillet or a flat pan.Drizzle some oil and simply flip the pan on the skillet with the uncooked side down.Cook for another 2 minutes and you are done.

Veggie lover’s Frittata

This is the easiest no fret breakfast of all. The short version is Toss veggies pour egg cook flip cook EAT EAT EAT!

Veggie lover's Frittata is a quick and easy paleo and whole 30 compliant vegetable frittata recipe
Ingredients
  • Eggs-2
  • Salt to taste
  • Onion-1
  • Mushroom-5-8
  • Cherry tomatoes-halved or normal tomato chopped
  • Medium low depth pan with a lid
  • Pizza Seasoning or dried mixed herbs
  • Olive oil-1 tsp
  • Water-2 tsp
Instructions
  1. Break the eggs in a bowl.Add 2 tsp water.Whisk whisk whisk.Add Salt and pizza seasoning or herbs.Add oil on the pan.Swirl it around to coat it everywhere.
  2. Add the onions and mushrooms.Saute till brown.This should take atleast 10-12 minutes.
  3. Make sure nothing sticks to the pan.Move the veggies around.
  4. Pour the egg mixture in the pan.Move the egg and veggies around to make the distribution equal.On a low-medium flame cook it covered with a lid for 3 minutes

I don’t pray often but i always pray while making poached eggs!

Eggs and avocado are a brilliant combination.It took me some convincing but now I resoundly believe in its brilliance.This is a simple one.Poach egg top with avocado and eat!

Avocado rose seems to be extremely popular right now.Every third food instagram post is an avocado rose.I had seen it so many times that i started dreaming about it so i had to get up and make it!

Incidentally after i wrote this blog piece i was asked by a writer on Bustle if she could use my avocado picture.:D i obviously said yes!

how to poach an egg
Ingredients
  • egg
  • water
  • pinch of salt
Instructions
  1. Break the egg in a small bowl
  2. Heat water in a deep vessel(more than twice the height of the egg)
  3. Add a pinch of salt.
  4. Bring the water to simmer.Not boiling but bubbling.
  5. Tip the egg in the water gently and start praying
  6. Let the water simmer for 2 minutes.Switch off the heat after this.
  7. Use a slotted spoon to gently remove the egg from the water.
  8. if you have not added your own steps you should see a poached egg..:D
