It’s magical how one small little egg can be made in so many diverse ways.Every region has an egg speciality like the All American Eggs Benedict,Chinese Fermented Eggs,Parsi Akoori,Tamil Style Mutta Curry,Turkish Eggs,is there an egg butter masala?there should be! I have recently become a fan of Eggs Benedict.We had Eggs Benedict as breakfast at 5.45 am just before heading back to india from Malaysia. I have never really caught on with the avocado obsession till date. I remember on our visit to Sri Lanka one of my friends stopped our entire caravan on a sinuous bend to get some avocados from the roadside ,which turned out to be raw by the way. How in London one of my friends went oooh ahhing on avocado butter and I thought to myself how can a fruit replace good old butter?! Perfect breakfast is eggs..But you can’t make bulls eye even on a Sunday morning!!Those things are reserved for the mornings when all you can do is break the eggs on a skillet and run!!On Sundays you need to make something more fancy…Which says hey this is a Sunday healthy breakfast…eat up..:D… I had some smoked cheese, tomato puree and eggs…and the obvious thing to make was baked eggs in tomato sauce…yummm…i know!!
