Indianised Lebanese Tabouleh Salad

Indianised Lebanese Tabouleh Salad

In indian context what is a salad? In the most down trodden, bare minimum, stripped form it’s the green salad made with one sad little cucumber, one tomato and one onion cut and artfully(not!) placed on a plate ,served as a dish which in my opinion no one who isn’t a heart or a diabetes patient ever touches. Though we Indian consume a lot of veggies ,most of it is cooked. This salad is sort of an Indian cousin of the actual Lebanese Tabouleh, also called Tabouli, uses Bulgar Wheat. But my version uses broken wheat aka our humble Dalia instead which saves us the time and space to forage another new ingredient. A Lebanese Tabouleh Salad is made with lots of parsley, some finely …

Avocado & Quinoa Salad with Balsamic Dressing

Loaded,Gluten Free Avocado & Quinoa Healthy Salad with Balsamic Vinegar and Shallots Dressing.

I am a very intuitive cook..The first time I attempt making something,I usually throw things together purely on instinct..Which works well, if I am making something familiar but when making dishes which I haven’t really tasted before or attempting a new cuisine ,I need to follow recipes..Though truthfully,I look at recipes more as a guideline than the absolute truth and I feel doing that gives me the artistic freedom needed to make the recipe my own. There are other perils of following recipes blindly too.Every region produces different flavour, size and quality of ingredients and it’s not possible to replicate a recipe 100% using natural locally available ingredients. That said, an onion is an onion in India,in the USA or in New …

Summer Melon Salad with Ricotta Cheese

Watermelon and MuskMelon Salad with Ricotta Cheese

The first time I expanded my melon horizons was in Rome.We had one free evening in Rome and we decided to explore the beach a few kms away from the city cause we are suckers for any waterbody. The beach was blah but we stumbled upon an eatery where they served us melon wrapped in prochitto. It was a simple dish with just two ingredients but it gave me something to ponder about. This dish is simple in its thought but it’s power packed with textures and flavour variations. The minute you have a mouthful of this you will be hit with sweet, tangy, salty and fresh flavours with a textural variations of crunchy melons and soft creamy  ricotta cheese. What I liked most …

Kolrabhi and Apple Salad

Kolrabhi and Apple Salad with yogurt fennel dressing

This salad showcases the under achievers of the vegetable and herb world. If you aren’t already a fan let me introduce you to this vegetable called Kolrabhi. Chances are if your mom didn’t cook with it you probably don’t either, atleast I didn’t till I read somewhere that it’s the vegetable of the year 2018!I was intrigued…cause first it’s so easily available in india that it didn’t seem like a vegetable worthy enough for that kind of stature and second cause it looked so..lets say plain Jane sorts. The more I read about it the more it the more I was sold on it especially cause I am not a big fan of cruciferous vegetables.I find broccoli a chore and cauliflower seems …

Black Quinoa Pumpkin Salad

Black Quinoa Pumpkin Salad

Those of you follow me on Instagram know that I have taken up a #30daysofsalad challenge.I find that easier to do this than cut out bad food from my diet-aka sugar, carbs etc. It’s especially difficult when I am testing cookie recipes and running behind a suddenly mobile baby.Oh those days when he used to be exactly where I left him 5 minutes back! This salad is Salad#5 of the challenge. It’s very minimalistic in its ingredients but the multiple textures make this salad a tantalising affair. What is Quinoa / Kinwa Quinoa is an ancient South American grain which has recently gained popularity in the health food circuit because of its high nutrient density. Its been hailed as a super grain though its not …

Cottage Cheese and Tomato Salad

Paneer and Tomato Salad

I want to say that everyday is a struggle with gestational diabetes but it looks like I was preparing for it for a long time. My dad has  had diabetes since he was 35 so my parents are the biggest source of knowledge for me. Knowingly or unknowingly they have imparted knowledge and inculcated habits which don’t make this as difficult it would be for normal folks. The biggest example being that we have never had milk with sugar or any other additives so my morning glass of milk or the occasional coffee I allow myself is not an ordeal it would be for normal folks. If there was one rule for folks with GDM(with insulin) is to feed your …

Spinach Avocado Salad with Poached Egg

I am not much of a salad person.I just have never liked them by themselves as much.It feels too extreme to just eat just salad.Even after eating a whole Caesar salad from Big Chill in Delhi I would feel like I was on a diet!It was definitely not diet food, it was at least 800 calories with all that cheese !I prefer sautéed veggies more. I decided to brave it and make an Avocado Spinach salad and cause it seemed too little I added a poached egg! Poached egg has been my nemesis for way too long for comfort. I have heard that any self-respecting cook knows how to poach an egg and I want to be self-respecting too!!! Well ,I watched Jamie …
