Mom’s Quick Paneer Capsicum

Super Simple,Quick,Vegetarian Paneer Capsicum Family Recipe.

I met a friend today and we were swapping childhood stories about how her mom cooked some super exotic dishes at home and how my mother was the most “Jugadu” cook ever. All most all our birthday parties had channa masala noodles which by the way we all loved!,bread rolls, fryams and a giant giant vat of Rasna but the “fine cutlery” along with my mothers 10 minute Paneer Capsicum recipe was taken out at the more grown up parties. Our Love for Paneer Capsicum I am not lying here but it’s really her goto recipe-it’s served every time important guests come home,it was served when my inlaws came home for the first time, it was served when my brother’s inlaws came …

Greek Yogurt Party Dip – Tzatziki

Greek Tzatziki dip

The first time I heard about cucumber and yogurt in one sentence it was from a friend desperately trying to loose weight, which I dismissed unceremoniously because in my mind anything touted as a weight loss meal is usually unappetising or something you are forced to eat because you want to lose those pesky kilograms you put on during festivals.Suffice it to say I never tried putting the two toghether..untill I tasted the Greek Tzatziki dip. But but but..The first time I had authentic tzatziki was in Athens, which seems ages ago now, sigh.Well, that was a different experience altogether.I remember landing in Athens, dumping our luggage in our shared hostel and heading out to get some Greek Coffee from this idyllic road side …

Easy Hummus

Easy Homemade Hummus

If my grandmother was here today she would have really smirked at this recipe and said whats so fancy about this channe ki chutney that you eat with papad.Well however you name it is essentially chickpea chutney. Some Channa or Chickpeas(as everybody outside of Bharat desh calls it) and a few olives here and a couple garlic cloves there and voila here is your hummus. If you are applauding my amazing writing skills then let me tell you that they are inspired from the barrage of nursery rhymes which have now entered my sacred erstwhile childfree house because I am a good mother and thus I must teach my baby about cows and spiders and spouts. Why spouts though?Whats the point? Bleh! …

Foxtail Millet Salad

Foxtail Millet Salad

It’s been so long since I posted but believe me when I say ,things have been action packed and full of surprises! Life seems to have come a full circle and I find myself back at my whole30 program.(almost) Life threw us a curveball , which was expected but also unexpected.I should have suspected something when I couldn’t stomach coffee anymore! Appearance of a faint second line was not enough confirmation for somebody as paranoid as us so an unnecessary blood test proved that we were indeed expecting! Looks like the whole30 program created the best possible environment for this to happen and we couldn’t be less ecstatic about it. What we didn’t expect was the all time sickness (there …

Skinny Mac and Cheese

Butternut Pumpkin Mac and Cheese

Mac and cheese is a comfort food that has transcended not only borders but also oceans! While parathas and capsicum potato curry remain my ultimate comfort food , pasta in a creamy sauce is my elixir when I am looking to curl up in a corner with a book. I love a simple pasta with just butter and some bacon..but if I have a hankering for something cheesy nothing warms my heart more than a mushy warm creamy bowl of mac and cheese. My only complaint with mac and cheese is that it is too heavy and high on calorie for its own good. So, I have come up with a skinny Mac and Cheese recipe, which lets you indulge …

Roasted Veggies in Italian Herbs

Baked Veggies with italian herbs

I want to start out by thanking Readerspride.com for featuring me on their site. It’s very inspiring when people reach out to you and feature you on their sites! It’s the reverse feedback loop from the food universe patting your back and telling you to keep going.:D After my brunch party on Sunday I had loads of veggies left, which I wanted to use. I contemplating making Pav Bhaji the quintessential Bombay street food but decided to order that instead (Love Swiggy!) and make this nice and healthy veggie bake for myself. All your half zucchinis and handful of mushrooms and tomatoes , that you keep wrapped up waiting for inspiration to strike and ultimately throw them at the end of …

Ratatouille

Ratatouille

The first time I heard about Ratatouille was through my brother.I don’t know where he tasted it but he was so awed by it that he came back home and tried his hand at making it.It was funny when he discovered that the dish contained brinjal cause he used to always fight with my mom whenever she made the traditional Baigan Bharta at home(Aubergine). The second time I heard about it was in the movie Ratatouille in 2007.The movie is about a mouse who wants to be a chef  ,whose signature dish is a Ratatouille. What better dish for a Rat to make than a “Rat”atouille. It tickled me something funny when I first saw the promo of the movie! Let …

Vegetarian Pumpkin Laksa with Peri Peri Chickpeas

Pumpkin Laksa with peri peri chickpeas

Once you start browsing, there is so much inspiration around. It’s difficult to zero in on what you want to make.I see a lot of simple recipes where the biggest effort is the grocery shopping. I wish I was more organised and had a better way to track my inspirations.I wish there was an online instant grocery shopping available.Because when the inspiration strikes I don’t have ingredients and when I have ingredients my mind is blank! I do write them on my phone and on word doc on my laptop..napkins..behind pamphlets..ammm..yeah a little disorganised.(Sidebar-If some of my OCD friends read this, the first flinch would be on the number of extra full stops that I have taken the liberty of using and …

Roasted Chickpeas

Homemade Garlic Roasted crunchy healthy Chickpeas

Warning!!-these are addictive and you can stop with only a bowl These crispy roasted chickpeas deserve a post of their own.Making these was an afterthought to the pumpkin laksa that I have pinned on my pinterest board few days back. For all you serial snackers, these will never make you feel guilty! Chuck the ugly tasteless sprouts and eat these! You can decide the flavours based on your palate.Roasting …

My Smoothie Bowl

Vegan Smoothie bowl

It’s weird having so much sugar after the whole 30 regime early in the morning. It’s almost like I am rebelling against it.I know most of you want to punch my face and say rebelling is if you eat a full batch of brownie! I unofficially not on paper agree..:D So other than avocado rose smoothie bowls are the new instagram fad.More exotic the fruit more like you get.Though its amazingly tasty and fulfilling its crazy high on natural sugar so I won’t suggest people on diabetes watch to eat this. But if you are eating pancakes or chole batoore or cheese sandwich everyday then this is a healthier indulgence! Its almost a smoothie but a little thicker and in a bowl …

Chia Pudding with Tropical Fruits and Walnuts

Chia Pudding

Have you heard of chia?and wondered what it was? I came across this while on my whole 30 diet as a healthy substitute to grains. These are seeds which when soaked in a liquid change from opaque little balls to plump jelly bomb like balls. They soak up the liquid they are soaked in. Remember those kulfi Faloodas you gorged down as a kid? Most resident indians would have tasted the famous ice cream- “Kulfi falooda” at least once in their lives.I have had the good fortune of eating way too many of those as a kid. There are so many very nostalgic memories attached to this one Indian dessert. Those little balls in the falooda are Chia Seeds. But I didn’t make the …

Asparagus and Garlic Soup

The whole 30 journey has taught me how to make simple meals with a few quality ingredients. It’s a wonder that just 5 ingredients can make a soup so delectable that you wish you had made more! My soups always double as sauces but this recipe yields exactly one serving ,I wish I had made more of this asparagus and garlic soup. After tasting this ,I badly want to try making chicken with the sauce version of this soup.I am sure it will be mind epic blowing!! One word of caution though! Don’t eat a hot soup and frozen grapes together.I wasn’t sure which I liked more and which would lose the right temperature so I ended up interspersing the soup with …

Spinach Avocado Salad with Poached Egg

I am not much of a salad person.I just have never liked them by themselves as much.It feels too extreme to just eat just salad.Even after eating a whole Caesar salad from Big Chill in Delhi I would feel like I was on a diet!It was definitely not diet food, it was at least 800 calories with all that cheese !I prefer sautéed veggies more. I decided to brave it and make an Avocado Spinach salad and cause it seemed too little I added a poached egg! Poached egg has been my nemesis for way too long for comfort. I have heard that any self-respecting cook knows how to poach an egg and I want to be self-respecting too!!! Well ,I watched Jamie …

Tomato Basil Soup

This is the most nifty magic trick up my sleeve. It’s an all purpose soup cum sauce.I always have some of this frozen in my fridge for an instant sauce. This simple soup has a million uses. You can make it into a Shorba- an indian soup by adding the quintessential tadka of cumin and chillies or make it italian by adding a dollop of pesto or cook your chicken breast in it. You can reduce it on the stove and with a splash of milk or cream and some herbs you can turn it into a pasta sauce! Most indian curries are tomato based so you can make a neat chicken curry or a Shahi Paneer with little milk. You can throw in …

Candied Orange and Chocolate Muffins

This particular muffin was more of an experiment that came out well than a proper recipe! It’s extremely easy and the result is mind-blowing! It’s so easy to make that I wonder why I didn’t think of it sooner! It’s almost the same recipe as my goto chocolate muffin recipe but I have just reduced the sugar by one forth and substituted it with candied orange instead and voila! Chocolate orange muffins! For those who love the combination of chocolate and orange this is a hedonistic Extravaganza!!Nothing could satisfy one more than these! Next time I will put a bit of orange frosting on them to enhance the taste further! The result is gooey chocolate muffin with small bites of candied …
