Have you heard of chia?and wondered what it was?
I came across this while on my whole 30 diet as a healthy substitute to grains.These are seeds which when soaked in a liquid change from opaque little balls to plump jelly bomb like balls.They soak up the liquid they are soaked in.
Remember those kulfi Faloodas you gorged down as a kid?Most resident indians would have tasted the famous ice cream- “Kulfi falooda” at least once in their lives.I have had the good fortune of eating way too many of those as a kid.There are so many very nostalgic memories attached to this one Indian dessert. Those little balls in the falooda are Chia Seeds.
But I didn’t make the connection till I went extolling about these new healthy substitute “chia seeds” to my mother and she very kindly let me know that they are nothing new in india.People have been having these since time immemorial during summer to keep their bodies cool.They are called Sabja seeds in the north india..They are basically a variety of Tulsi seeds.
After being mind blown by a lot of delectable looking Chia Seeds pudding pictures on pintrest I was determined to make one at home!
Its only recently they have become a very commonplace health substitute around the world but they have been used in india for very long indeed.
It’s mango season in india so I find myself buying them without a real thought of any specific recipe in mind.I decided to make a coconut milk chia seeds pudding with fresh mango. I soaked them at 7 in the night and couldn’t sleep in the night! I kept getting up and checking how the chia seeds are puffing up.
I also added a little bit of strawberry compote which can be omitted if you don’t want to have cooked fruit.
This recipe is Paleo approved.
Caution though-this is not a whole 30 approved recipe.
Serves: 1 serving
- 2 tbsp Chia seeds
- 100 ml Coconut milk(replace with normal milk if not on paleo or lactose tolerant)
- 1 Mango-diced
- 1 tsp Honey
- 10 tbsp other fruits like-strawberries,pomogranate and grapes
- 2-3 Walnut or any other nuts.
- Soak the chia seeds overnight in coconut milk,honey and 2 tablespoon of water.
- In the morning layer the soaked chia seeds with fruits .
- Garnish with walnuts.
- Serve immediately
