Chocolate Oats Brownies | Gluten Free

Dark and Decadent Chocolate Oats Brownies. The best Gluten Free Chocolate Brownie recipe made with 100% oatmeal.

I will be absolutely frank here! The first time I set out to make these Chocolate Oats Brownies ,I had crazy jitters.I was very unsure about it.I mean how could something with oats taste decadent? because that’s what my brother wanted.Something indulgent, decadent,Dark Chocolate brownie.Basically the real stuff and not some rip off healthy version. His words..not mine! I understood the hesitation and I understand if you are in the same kind of dharm Sankat(I mean dilemma) that I was in. Oats do not have any gluten which means the result could be weirdly crumbly or gummy and believe me,I have made my share of cakes and cookies with gluten free ingredients.Though these Chocolate Oats Brownies that came out of the …

Avocado & Quinoa Salad with Balsamic Dressing

Avocado and quinoa balsamic salad

Today’s recipe is Super Healthy and yummy to the boot – introducing Avocado and Quinoa Balsamic salad I am a very intuitive cook..The first time I attempt making something,I usually throw things together purely on instinct..Which works well, if I am making something familiar but when making dishes which I haven’t really tasted before or attempting a new cuisine ,I need to follow recipes..Though truthfully,I look at recipes more as a guideline than the absolute truth and I feel doing that gives me the artistic freedom needed to make the recipe my own. There are other perils of following recipes blindly too.Every region produces different flavour, size and quality of ingredients and it’s not possible to replicate a recipe 100% using natural …

Chocolate Avocado Mousse

Avocado Chocolate Mousse

Avocado fever has officially struck me. How do I know this? I buy 5 avocados at a time and I can now judge the levels of ripeness of my avos like a pro! I even time them according to my scheduled travels! Like last weekend I was in Chennai so I left 2 beautiful avocados along the windowsill to ripen into beautiful umami goodness, which I could use to make a chocolate mousse. It is so simple that you can give the dessert duty to your kids (or husband). Only make sure that the avocado not over or under ripe cause it will make the mousse bitter.(not the bitter chocolate bitter). The texture of the mousse is very light and …

Vegan Chickpeas and Barley Salad

Healthy Vegan Chickpeas and Barley Salad topped with an avocado rose

It’s sheer serendipity that I came across this beautifully written article by Shonali Muthalaly on the GOODFOOD supplement of The Hindu(sidebar-I wish I could write even a sentence like her!). She talks about how she went on a search of black sticky rice and found a version grown right here in Karnataka! She has shared a slew of amazing resources from where you can order locally grown food stuff online. That was when I decided to do a recipe which showcases these homegrown superfoods. What better to create a recipe with chickpeas or as we call it locally “chole”. Superfood like millets,Ragi,Chia seeds and Chickpeas are staples in certain pockets of india. I am sure there are a lot of other superfoods hidden …

Day 10-Tom Kha Gai with Raw Mango Salad

It’s amazing to see the overwhelming response from the whole30 community on instagram!! It’s even more awesome to listen to your very very vegetarian mom saying your chicken shicken looked great!!: D…One thing which struck me today with our conversation was that this diet has no artificial “Protein Shakes” or “Fibre Tablets” or even a “specially brewed weight control green tea” like most of the diets dietitians are suggesting. There are no gimmicks; you know exactly what you are eating and where it has come from! I am sure a lot of folks have gone from pillar to post searching for the best weight solution ever and been given a bunch of bottles filled with tablets! Or are given some …

Day 4 and 5-Ginger Coriander Basa with Spicy Baby Potatoes

Day 4 was not as smashing a success as the other days. I conquered the cravings but botched up the cooking. The chicken was over cooked and the flavor from balsamic vinegar was too strong. Only saving grace were the carrots which were cooked to perfection…Sweet and salty charred orange perfection! I did make a good egg dish. It was like a quiche but without the pastry or cream and milk. I used the left over mushrooms from the lunch in this dish. Pretty bite sized pieces of eggy delight. They work well as a post workout snack…But unlike the, not so tasty chicken and mushrooms these didn’t photograph as well… :(..I want to work more on these recipes before …
